Gameday Recipe: Scallops and Pina Coladas

The New England Patriots will be traveling south to take on the Miami Dolphins this Sunday and what better way to get into the football spirit than pretending you are in sunny, warm Miami with the team. Try these scallops wrapped in bacon for the perfect “pretending you are somewhere warm” game day food.

Ingredients:

  • 40 Bay Scallops (fresh or frozen)
  • 20 pieces of your favorite kind of bacon
  • Nonstick baking sheet

Directions:

First, wash the scallops under cold water. Next, wrap two scallops (since they are small) in one piece of bacon. Place the scallop wrapped in bacon on the baking sheet. Repeat until all the scallops are wrapped.

Put them in the oven at 350 degrees for about 20 minutes or until the bacon is crispy.

Serve warm and enjoy!

Another way to enjoy the “pretending it is warm” atmosphere is with a nice cold Pina Colada.

Alcoholic:

  • 3 oz light rum
  • 3 tbsp coconut cream
  • 3 tbsp crushed pineapple

Put all ingredients into an electric blender with 2 cups of crushed ice. Blend at a high speed for a short length of time. Strain into a glass and serve with a straw.

Non-Alcoholic

  • 7 oz pineapple juice
  • 2 oz coconut cream
  • 1 cup crushed ice

Add the pineapple juice, coconut cream and crushed ice to a blender; blend at high speed. Pour into a glass. Garnish with a maraschino cherry, a pineapple wedge, and serve.
